12 cloves of garlic, peeled
4 tsp
curry paste (make it from scratch or buy it)
1 tb cooking oil (sesame oil is most delicious)
1 tb lime juice OR 2 tb lemon juice
1/4 tsp
salt
plain
yoghurt (optional)
Preheat
the oven to 400F.
In a large bowl combine curry paste, oil, lime juice
and salt.
Toss the mixture with garlic and cauliflower until thoroughly
coated.
Arrange the cauliflower and garlic on a lightly greased baking sheet and put it in the oven for
45-60 minutes. Check every 15 minutes or so, rearranging the cauliflower
to prevent overcooking.
Remove
the cauliflower and garlic and transfer to a bowl.
If you desire, mix a couple spoonfuls of plain yoghurt in. It will give the dish a creamier, milder taste.
Thanks to the Palinode for this one, which is in regular rotation at our house.
I have actually burnt the cauliflower by not checking it at intervals, but I still liked it.
