½ c chopped onion
4 tb butter
3 tb flour
2 tsp curry powder
1 tsp salt
2 c milk
8 hard-cooked eggs
Sauté onion in butter till golden.
Remove from heat and
blend in flour, curry powder, salt and milk.
Stir constantly over medium heat,
let sauce thicken and boil one minute.
Add hardcooked eggs, quartered
lengthwise, and heat through.
Heavenly eating on hot waffles, toasted muffins
or hot buttered toast.
